Crustless Cheesecake Recipe

It's not often that I can honestly say (or type) that a low fat dessert tastes good. Low fat and delicious don't usually go hand-in-hand, do they? This crustless cheesecake recipe, however, is quite the exception to that rule. It's surprisingly yummy and the fact that it's only 100 calories per slice, makes this tofu cheesecake a total winner.

The star ingredient of this dessert is tofu. While we are being honest here, I’ll admit that I don’t usually bake with tofu. In fact, I don’t even cook much with tofu either. I even had some reservations about making this crustless cheesecake when I read that tofu was involved but I went with my gut and I made the recipe anyway. Boy am I glad I did! Don’t let tofu scare you away folks.

The rest of the ingredients are like a sweet sonnet to me. Sour cream, cream cheese, sugar, vanilla, eggs, and lemon. I lick my lips just typing these words. You won’t even notice that you are using the low fat and fat free versions of the creams either. Everything blends together really well and blending is all that is required here. Dump all of the ingredients (and the tofu too) into your blender and make some cheesecake magic happen.

Upon baking the liquid cheesecake for forty five minutes, I like to take it straight to the fridge to cool. I’m usually having to fend my family off of all food when I take it out of the oven so this “straight to fridge” method allows it to cool faster and it keeps eager hands from messing up my beautiful crustless cheesecake before it’s ready to serve.

I like to top our cheesecake with real fruit to keep it healthy and robust in flavor. I usually make a quick strawberry topping by pulsing fresh strawberries and sugar in the blender. I also recommend a Plum Compote topping.

Crustless Cheesecake Recipe

Additional nutritional information is as follows:
Saturated Fat – 0.2 grams per serving
Fiber – 0.06 grams per serving
Sodium – 253 grams per serving
Sugars – 13 grams per serving

Yields: 10 slices

  • 15 oz. firm, low-fat tofu
  • 1/2 cup fat free sour cream
  • 1 cup fat free cream cheese
  • 1/2 cup sugar
  • 1 Tbsp vanilla extract
  • 2/3 cup egg whites
  • 3 tsp lemon juice
  • 2 tsp lemon peel
  1. Preheat the oven to 350 degrees F.
  2. Spray a 9-inch cake pan with cooking spray.
  3. Blend all ingredients together in a blender or food processor until very smooth.
  4. Pour into the prepared cake pan. Place the filled cake pan in a large bake-proof pan filled with 1 inch of hot water.
  5. Bake until firm in the center, about 45 minutes. Chill completely; cut in 10 slices and top with Plum Compote or fresh fruit.
  • Preparation time: 15 minutes
  • Cook time: 45 minutes
  • Total time: 1 hour
